It's hard to believe from the bland strip-mall exterior of The Bayou that an abundance of atmosphere exists inside. Surrounded by multicolored Christmas lights and garland, not-so- subtle voodoo references and ominous hanging skulls, you'll feel as if you wandered into some Bourbon Street speakeasy in the midst of Mardi Gras.  The restaurant area is small but cozy; you're pretending you're in New Awlins, after all, so get intimate with your neighbors. The fiery feast begins with a smattering of such hearty starters as sweet potato fries, andouille- topped tater skins or chili cheese grits. The buffalo wings, while not necessarily a Louisiana staple, are also popular appetizers. In addition to daily specials, such entrees as pan-fried catfish, blackened steak and juicy etouffee will burn their way into your minds (and digestive tract) as you kick back to the live band often jamming in the bar area. Finish up with a few more specialty drinks (fruity Cyclones and Tsunamis complement the Hurricane selection) and try one of the luscious desserts (the Mojo is a delectable chocolate delight). Bring lots of green with you (the only credit card they accept is American Express), and don't forget to drape those sparkling beads around your neck to remind you of your Big Easy night out as you leave. – J.
